A LOW CARB granola recipe?! How can it be? Simple: nix the traditional granola base of oats and grains. Instead, bake up a mixture of your favorite nuts, seeds, and dried fruit! You’ll have a satiating, fiber-filled snack and the crunchiest granola you ever did eat.

Ingredients

  • cup walnuts roughly chopped
  • cup pecans roughly chopped
  • cup macadamia nuts roughly chopped
  • ½ cup sliced almonds
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • ¼ cup ground flax
  • ¼ cup unsweetened cranberries
  • 2 Tbsp coconut shreds
  • 2 Tbsp fiber syrup/sukrin gold optional for caramelization
  • 2 Tbsp erythritol
  • 2-3 Tbsp coconut oil
  • 1 tsp cinnamon
  • pinch of salt

Instructions

  • Preheat oven to 350°F (180°C).
  • Mix everything together. Transfer to a pan lined with parchment.
  • Bake 15-25 minutes. If you want larger pieces of granola, don’t stir. If you want smaller pieces, stir halfway through.
  • Allow to cool completely before breaking up into pieces.
  • Yields 2 cups low carb granola.
