Seriously, these lentil patties are the easiest vegan meal of all easy vegan meals. Three main ingredients, only minutes to prep, and super budget-friendly. This entire veggie patties recipe costs you less than ONE dollar! Lentils, oats, and sweet potato are all awesome options for healthy meals that stay within your budget. And, they’re even cheaper when you buy them in bulk!

Ingredients

  • cup dry red lentils ~1 cup cooked, prepared according to package directions
  • 1 sweet potato mashed
  • 1 cup rolled oats
  • salt & pepper to taste
  • 1 tsp garlic powder
  • ¾ tsp onion powder
  • 1 tsp cumin

Instructions

  • Preheat oven to 350°F (180°C).
  • In a large mixing bowl, add all ingredients. Mix to combine.
  • On a baking sheet lined with parchment and sprayed, dollop lentil mixture and press down lightly into patties, around ¼ inch thick. (I used an ice cream scoop to portion each patty.)
  • Bake for 30 to 35 minutes, until just beginning to brown on top and crisp on the outside.
  • Serve and enjoy!
  • Lasts 3-4 days in an airtight container in the fridge, or 1 month in the freezer.
