If the sweet, indulgent taste of these low carb cookies isn’t enough to make them worth trying, how about considering they’re keto NO BAKE cookies?! With just 5 ingredients and no oven needed, these no bake coconut cookies couldn’t be easier.

Ingredients

  • 2 cups unsweetened coconut shreds
  • cup coconut oil
  • cup low-carb liquid sweetener/fiber syrup
  • ½ tsp vanilla
  • ¼ tsp salt

Instructions

  • In a large mixing bowl, combine all ingredients. Mix well to integrate.
  • Use damp hands to form into cookie shapes. (I used a regular 4-teaspoon cookie scoop to help me portion my cookies!)
  • Place shaped cookies on a flat plate or tray and allow to firm up in the fridge (2-4 hours, or overnight).
  • Serve and enjoy!
  • Store in an airtight container in the fridge, or in the freezer to prevent overindulging!
  • Yields ~16 keto no bake coconut cookies.
