whole-wheat penne pasta
or regular, gluten-free, etc.

cups
vegetable broth 1 cup broccoli
cut into small florets
½
cup
carrots
chopped

spears
~½ cup asparagus, cut into 1-inch pieces
½
cup
zucchini
chopped
½
cup
Sunsweet® Amaz!n™ diced prunes
1
can
14-oz diced tomatoes
¼
cup
grated parmesan
omit for vegan pasta primavera
⅓
cup
slivered almonds

Tbsp
parsley
chopped

Tbsp
lemon juice
salt & pepper
to taste
Instructions
Add penne pasta to
Instant Pot
and cover with broth.
Add broccoli, carrots, asparagus, zucchini, prunes, and diced tomatoes. Make sure everything is covered by the diced tomatoes, but don’t stir.
Cover Instant Pot and cook on manual setting at high pressure for 4 minutes. After cooking, quick release the steam for 5 minutes.
Carefully remove the lid and stir in remaining ingredients, seasoning to taste.
Serve and enjoy!
Yields ~6 cups Instant Pot pasta primavera, 4 servings total.
