Ingredients
Gluten Free Pumpkin Bread Batter

pumpkin puree

plain whole milk yogurt
⅓
cup
coconut sugar

tsp
vanilla extract

tsp
pumpkin pie spice

cinnamon

tsp
baking soda

tsp

1 ⅓

gluten free all purpose flour
or regular all purpose, whole wheat, or oat flour
Mix-Ins

chopped walnuts
Optional Topping

pumpkin seeds
Instructions
Preheat oven to 350°F (180°C).
In a large bowl, whisk together eggs, pumpkin, yogurt, coconut sugar, vanilla, spices, baking soda and salt. Add flour and mix to integrate.
Fold walnuts into batter.
Pour into a lined
8x4-inch loaf pan
. Top with pumpkin seeds, if desired.
Bake for 40-45 minutes, until a toothpick comes out clean.
Cool completely before removing from pan and slicing.
