Ingredients

Pumpkin Spice Waffles

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp cardamom
  • ¼ tsp ground ginger
  • ¼ tsp salt
  • cup pumpkin puree
  • cup prune juice
  • 1 egg

Topping Ideas

  • maple syrup
  • whipped cream
  • pumpkin seeds
  • chopped prunes
  • pad of butter

Instructions

  • Whisk together dry ingredients.
  • Separately, whisk together wet ingredients.
  • Add dry mixture into wet mixture, mixing well to combine.
  • Preheat waffle iron. Once heated, spray well with cooking spray.
  • Scoop batter into heated waffle iron. (My 7-inch round Belgian waffle maker requires 1 cup batter.)
  • Close and cook according to your waffle maker’s specifications. (Mine takes about 4 minutes.)
  • Option: Pour batter onto a heated griddle or fry pan to make pancakes!
  • Serve warm with desired toppings and enjoy!
  • Yields 2 cups of batter or 2 waffles, depending on size of waffle maker. (Some smaller waffle makers only use ½ cup of batter, which would yield 4 waffles.)
