- 2 lbs 900g boneless beef chuck shoulder roast, fat trimmed, cut into strips
- 1 red bell pepper cut into strips
- 1 yellow bell pepper cut into strips
- 1 green bell pepper cut into strips
- 1 onion thinly sliced
- 3 cloves garlic minced
- 2 limes juiced
- 1 Tbsp chili powder
- 2 tsp cumin
- 1 tsp paprika
- 1 tsp salt to taste
Add all ingredients to your slow cooker and cover.
Cook over low heat for 8 hours, until beef is tender.
Serve over rice or with tortillas with your favorite toppings!
