Dark Chocolate Trail Mix Bites

Let’s be real: what’s the best part of a store-bought bag of trail mix? The CHOCOLATE, of course! Unfortunately, the classic chocolate chips or M&M’s in most trail mix aren’t so fuel-filled. Instead, get your sweet fix with these dark chocolate trail mix bites, so you can choose the type of chocolate you’re eating!

Ingredients

  • 1 cup chocolate of choice melted (100% dark, 70%+ dark, dairy-free, etc.)
  • 1 Tbsp pumpkin seeds
  • 1 Tbsp goji berries unsweetened
  • 1 Tbsp diced prunes
  • 1 Tbsp raisins
  • 1 Tbsp slivered almonds
  • any additional toppings that you like!

Instructions

  • In a double boiler (or microwave, if preferred), melt chocolate.
  • Dollop melted chocolate (about 2-3 teaspoons) onto a baking sheet lined with parchment.
  • Add nuts, seeds, and fruit to each chocolate dollop.
  • Refrigerate for 2-3 hours or overnight, until firm.
  • Pop trail mix bites off of parchment, serve, and enjoy!
  • Store in an airtight container in the fridge as a snack throughout the week!
