Ingredients
Curried Vegan Sweet Potato Soup
drizzle of oil
1
cup
onion
chopped
4
cloves
garlic
minced

Tbsp
fresh ginger
grated
4
cups
sweet potato
peeled & cubed (~2 large sweet potatoes)
4
cups
vegetable broth
1
tsp
curry powder
¾
tsp
salt
pepper
to taste
green onion
chopped (for topping)
Instructions
Heat oil in a saucepan over medium high heat. Add onion and cook until tender, 4-5 minutes. Add garlic and ginger and saute for another minute.
Add in sweet potato, seasonings and vegetable broth. Bring to a boil, reduce heat and simmer for 15-20 minutes, until the potatoes are tender.
Transfer the mixture to a
blender
and blend in batches until smooth.
Serve!
