- 2 lbs 900g boneless skinless chicken breast, cubed
- 1 green bell pepper chopped
- 1 yellow bell pepper chopped
- 2 cups 260g chopped zucchini
- 1 cup 150g red onion, diced
- 1 16 oz, 450g bag frozen corn
- 1 15 oz, 425g can black beans
- 2 garlic cloves minced
- 1 cup 235 mL broth
- ½ cup 15g cilantro, chopped
- 2 limes juiced
- 1 tsp cumin
- salt & pepper to taste
- Add your favorite toppings! I love sour cream guacamole, salsa, cheese, etc.
Add all ingredients to your slow cooker and cover.
Cook over low heat for 6 hours, until chicken is tender.
Serve with tortillas, on a salad, or as a burrito bowl with rice!
Top with sour cream, guacamole, salsa, cheese, or your favorite toppings!
