1 cup applesauce 2¼ cups rolled oats 2 eggs ½ cup honey or maple syrup ½ cup nut or seed butter almond, cashew, or peanut 2 Tbsp orange zest fresh 1 tsp vanilla extract optional 1 tsp baking powder ½ tsp baking soda ½ tsp salt ½ cup orange juice fresh, adjust for consistency 1 cup cranberries fresh or frozen
Preheat oven to 375°F (190°C). Grease or line a standard muffin tin.
Add all ingredients except cranberries to a blender and blend until smooth and thick.
Stir cranberries into the batter by hand.
Divide batter evenly among muffin cups, filling each about ⅔ full.
Bake 18–20 minutes, or until a toothpick inserted in the center comes out clean.
Allow muffins to cool for 15 minutes before removing from the tin.
