Ingredients

  • 1 cup applesauce
  • cups rolled oats
  • 2 eggs
  • ½ cup honey or maple syrup
  • ½ cup nut or seed butter almond, cashew, or peanut
  • 2 Tbsp orange zest fresh
  • 1 tsp vanilla extract optional
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup orange juice fresh, adjust for consistency
  • 1 cup cranberries fresh or frozen

Instructions

  • Preheat oven to 375°F (190°C). Grease or line a standard muffin tin.
  • Add all ingredients except cranberries to a blender and blend until smooth and thick.
  • Stir cranberries into the batter by hand.
  • Divide batter evenly among muffin cups, filling each about ⅔ full.
  • Bake 18–20 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow muffins to cool for 15 minutes before removing from the tin.
