Ingredients

Chocolate Zucchini Smoothie

  • 1 small to medium zucchini, frozen (~1 cup chopped)
  • 2 Tbsp cocoa powder
  • cup coconut milk
  • ¼ cup coconut cream
  • 1 Tbsp coconut butter

Optional Toppings

  • chopped zucchini
  • cacao nibs
  • whipped cream or coconut whipped cream
  • coconut shreds

Instructions

How to Freeze Zucchini for Smoothies

  • Chop zucchini into pieces for blending.
  • Transfer into a freezer-safe bag (or jar) and seal, removing as much air from the bag as possible.
  • Freeze zucchini for at least 2+ hours, or up to 3 months.

Zucchini Smoothie

  • Add frozen zucchini to a blender with cocoa powder, coconut milk, coconut cream, and coconut butter. Blend until smooth.
  • Serve with desired toppings and enjoy!
