Ingredients

  • 1 cup cooked savory oatmeal base
  • 2 Tbsp goat cheese crumbles divided
  • ¼ cup sliced onion sautéed
  • ¼ cup sliced mushrooms sautéed
  • 1 Tbsp pine nuts
  • 2 tsp chives chopped

Instructions

  • In a pan over medium heat, drizzle a bit of oil and add onion and mushrooms, seasoning to taste with salt and pepper.
  • Turn heat to low and sauté 20 minutes, until tender and caramelized. Set aside.
  • Stir 1 Tbsp goat cheese into warm savory oatmeal so it melts. (Save 1 Tbsp for topping!)
  • Add remaining toppings, serve, and enjoy!
