  • Thinly slice cucumber lengthwise using a mandoline—as thin as possible. (Or carefully slice into long thin strips with a knife.)
  • Lay coconut wrap or low carb tortilla flat and spread on a thin layer of cream cheese, all the way to the edges of the wrap.
  • About ½ inch from the bottom edge of the wrap, place 2 thin cucumber slices side by side.
  • Layer smoked salmon on top of cucumber. Sprinkle everything bagel seasoning over entire surface.
  • Fold over bottom edge of wrap, then roll gently but tightly into a cylinder. Use additional cream cheese to ‘glue’ the edge and seal the roll.
  • Slice roll into 6 sections to create pinwheels. Serve and enjoy!
