Apricot Cilantro Jalapeno Hummus

A zesty hummus dip with a kick of jalapeno flavor and sweet, chewy bits of dried apricots in every bite.

- 1 can chickpeas (15-oz), drained & rinsed
- 3 jalapeños chopped & seeded (if desired, for flavor without spice)
- 3 cloves garlic
- 3 Tbsp tahini
- ⅓ cup cilantro
- 2 Tbsp lime juice
- 1 Tbsp olive oil
- 1 tsp cumin
- ¾ tsp salt
- ⅓ cup dried apricots chopped
Toppings:
- jalapeño slices
- chopped apricots
- paprika
Combine all hummus ingredients except for apricots in food processor. Blend until smooth.
Stir chopped dried apricots into hummus.
Add desired toppings, serve, and enjoy!
