Ingredients

  • 1 can chickpeas (15-oz), drained & rinsed
  • 3 jalapeños chopped & seeded (if desired, for flavor without spice)
  • 3 cloves garlic
  • 3 Tbsp tahini
  • cup cilantro
  • 2 Tbsp lime juice
  • 1 Tbsp olive oil
  • 1 tsp cumin
  • ¾ tsp salt
  • cup dried apricots chopped

Toppings:

  • jalapeño slices
  • chopped apricots
  • paprika

Instructions

  • Combine all hummus ingredients except for apricots in food processor. Blend until smooth.
  • Stir chopped dried apricots into hummus.
  • Add desired toppings, serve, and enjoy!
  • Yields 2 cups
