Curried Vegan Sweet Potato Soup

  • drizzle of oil
  • 1 cup onion chopped
  • 4 cloves garlic minced
  • 2 Tbsp fresh ginger grated
  • 4 cups sweet potato peeled & cubed (~2 large sweet potatoes)
  • 4 cups vegetable broth
  • 1 tsp curry powder
  • ¾ tsp salt
  • pepper to taste
  • green onion chopped (for topping)


  • Heat oil in a saucepan over medium high heat. Add onion and cook until tender, 4-5 minutes. Add garlic and ginger and saute for another minute.
  • Add in sweet potato, seasonings and vegetable broth. Bring to a boil, reduce heat and simmer for 15-20 minutes, until the potatoes are tender.
  • Transfer the mixture to a blender and blend in batches until smooth.
  • Serve!
