Ingredients

Gluten Free Pumpkin Bread Batter

  • 2 eggs
  • ½ cup pumpkin puree
  • cup plain whole milk yogurt
  • cup coconut sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • ½ tsp cinnamon
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 ⅓ cups gluten free all purpose flour or regular all purpose, whole wheat, or oat flour

Mix-Ins

  • cup chopped walnuts

Optional Topping

  • 2 Tbsp pumpkin seeds

Instructions

  • Preheat oven to 350°F (180°C).
  • In a large bowl, whisk together eggs, pumpkin, yogurt, coconut sugar, vanilla, spices, baking soda and salt. Add flour and mix to integrate.
  • Fold walnuts into batter.
  • Pour into a lined 8x4-inch loaf pan. Top with pumpkin seeds, if desired.
  • Bake for 40-45 minutes, until a toothpick comes out clean.
  • Cool completely before removing from pan and slicing.
