Parmesan & Almond Crusted Tilapia

  • ½ cup almond flour
  • ¼ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt & pepper to taste
  • 2 tilapia filets 4-6 oz each
  • 2 Tbsp oil/ghee
  • 1 lemon zest & juice (to add after cooking)

Garlic Snow Peas

  • ½ lb fresh snow peas
  • drizzle of oil
  • 4 cloves garlic minced
  • salt & pepper to taste
  • 1 lemon zest & juice (to add after cooking)
  • 2 Tbsp toasted almonds to add after cooking

Mango Rhubarb Salsa

  • 1 stalk rhubarb diced
  • ½ cup mango diced
  • ½ cup cherry tomatoes quartered
  • ¼ cup red onion diced
  • 1 jalapeño seeded & diced
  • 2 Tbsp fresh cilantro chopped
  • 1 lime juiced
  • salt to taste


  • In a large, flat dish, combine almond flour, Parmesan cheese, and spices for tilapia coating. Press each tilapia filet in flour mixture to coat both sides, using hands as needed to get a nice even coating.
  • In a separate mixing bowl, toss snow peas with oil, garlic, salt, and pepper.
  • Heat a large skillet or pan over medium-high heat for 2-3 minutes and add cooking fat of choice (i.e. oil/ghee). Spread oil or ghee across the bottom of the pan to coat.
  • Add coated tilapia filets to one half of the pan and cook for about 3 minutes on each side, until golden brown.
  • On the other half of the pan, add seasoned snow peas and saute while the fish cooks.
  • Finish whole dish in the pan with lemon zest and juice, and sprinkle toasted almonds onto snow peas.
  • In a separate bowl, combine salsa ingredients and mix well to integrate.
  • Top crusted tilapia with rhubarb salsa, serve on a plate with cooked snow peas, and enjoy!
  • Yields 2 servings almond crusted tilapia skillet meals.
