  • 8 oz whole-wheat penne pasta or regular, gluten-free, etc.
  • cups vegetable broth 1 cup broccoli cut into small florets
  • ½ cup carrots chopped
  • 15 spears ~½ cup asparagus, cut into 1-inch pieces
  • ½ cup zucchini chopped
  • ½ cup Sunsweet® Amaz!n™ diced prunes
  • 1 can 14-oz diced tomatoes
  • ¼ cup grated parmesan omit for vegan pasta primavera
  • cup slivered almonds
  • 2 Tbsp parsley chopped
  • 1 Tbsp lemon juice
  • salt & pepper to taste


  • Add penne pasta to Instant Pot and cover with broth.
  • Add broccoli, carrots, asparagus, zucchini, prunes, and diced tomatoes. Make sure everything is covered by the diced tomatoes, but don’t stir.
  • Cover Instant Pot and cook on manual setting at high pressure for 4 minutes. After cooking, quick release the steam for 5 minutes.
  • Carefully remove the lid and stir in remaining ingredients, seasoning to taste.
  • Serve and enjoy!
  • Yields ~6 cups Instant Pot pasta primavera, 4 servings total.
