Healthy Sloppy Joes Pepper Poppers

Lightened-up healthy sloppy joes made with ground turkey, served in mini sweet peppers. Check out my cauliflower mashed potatoes for a veggie-packed side dish option!

Ingredients

Sloppy Joes Meat:

  • drizzle of oil
  • ½ cup chopped onion
  • 2 cloves garlic minced
  • 1 green bell pepper finely chopped
  • 1 lb ground turkey or ground meat of choice
  • salt to taste

Sauce:

  • 8 oz tomato sauce canned
  • ½ cup ketchup
  • 1 Tbsp coconut sugar
  • Tbsp Worcestershire sauce/English sauce
  • 1 tsp mustard powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • pepper to taste

Serving Vessel:

  • mini peppers
  • or hamburger/hot dog buns pita pockets, lettuce wraps—anything you like!
  • Optional Topping: serve with sliced pickles!

Instructions

  • In a pan over medium heat, sauté onion, garlic, and bell pepper in a drizzle of oil for a few minutes, until tender.
  • Add ground turkey, season with salt, and cook through, breaking apart and stirring as meat cooks.
  • In a measuring cup, combine all sauce ingredients, seasoning to taste.
  • Pour sauce over meat mixture, mix to combine, and simmer 30-45 minutes, stirring occasionally.
  • To prepare mini pepper poppers, slice mini peppers lengthwise, chopping just a sliver of one side off to create a ‘boat’ with a cavity to hold your sloppy joe mixture.
  • Spoon sloppy joe mixture into mini pepper boats, serve with sliced pickles, and enjoy!
  • Yields 4 servings healthy sloppy joes pepper poppers.

Notes

For meal prep:

  • Store cut peppers and sloppy joe mixture in separate containers in the fridge. Assemble at the time of eating.
  • You can heat sloppy joe mixture before spooning into your pepper boats, or enjoy cold!
