Low Carb Vegan Buddha Bowl

Roasted Tahini Veggie Bowl:
- 1½ cups broccoli florets
- 1 cup Brussels sprouts
- 2 Tbsp tahini
- ½ tsp oil
- 2 Tbsp pumpkin seeds
- pinch of salt don’t hold back!
- 10 Kalamata olives
- ½ avocado for serving
- sesame seeds for topping
Preheat oven to 425°F (220°C).
To a pan lined with parchment or foil, add broccoli, Brussels sprouts, and pumpkin seeds. Toss with oil, tahini, and salt.
Roast 35 minutes.
Remove from oven, add Kalamata olives to pan, and toss.
Serve in a bowl with sliced avocado and a sprinkle of sesame seeds!
For meal prep:
Store cut vegetables and pumpkin seeds together in a jar or airtight container in the fridge.
When ready to cook, add to pan, toss with seasonings, and roast.
