Stir in milk, coconut oil, and salt, whisking well to combine.
Add in flour, Italian seasoning, and baking soda, whisking until there aren’t any lumps left.
Cover bowl and allow to sit at room temperature for one hour, or overnight in the fridge. (This will help your batter thicken and pancakes get fluffy!)
After batter rests, stir in pizza mix-ins.
Preheat your waffle maker. Cook according to waffle maker directions. (Mine needs about 4 minutes per waffle.)
Serve topped with warm pizza sauce and parmesan and enjoy!
