Gluten Free Pizza Waffles Recipe

Ingredients

Pizza Waffles Batter:

  • 3 eggs
  • ½ cup almond milk or milk of choice
  • 1 Tbsp coconut oil
  • ½ tsp salt
  • 1 cup brown rice flour
  • 2 tsp Italian seasoning
  • ½ tsp baking soda

Pizza Mix-Ins:

  • cup shredded mozzarella cheese
  • cup mini pepperoni
  • ½ plum tomato chopped
  • cup green bell pepper chopped
  • or any pizza mix-ins that you enjoy!

Toppings:

  • ½ –1 cup warm pizza sauce
  • shaved parmesan

Instructions

  • In a large mixing bowl, whisk eggs until frothy.
  • Stir in milk, coconut oil, and salt, whisking well to combine.
  • Add in flour, Italian seasoning, and baking soda, whisking until there aren’t any lumps left.
  • Cover bowl and allow to sit at room temperature for one hour, or overnight in the fridge. (This will help your batter thicken and pancakes get fluffy!)
  • After batter rests, stir in pizza mix-ins.
  • Preheat your waffle maker. Cook according to waffle maker directions. (Mine needs about 4 minutes per waffle.)
  • Serve topped with warm pizza sauce and parmesan and enjoy!
