Honey Dijon Pork Loin Roast

  • 3 lbs boneless pork loin trimmed
  • salt to taste
  • pepper to taste
  • drizzle of oil
  • ¾ cup Dijon mustard
  • 2 Tbsp honey
  • 1 Tbsp tarragon
  • parsley for topping


  • Preheat oven to 375°F (180°C).
  • Season pork loin with salt and pepper.
  • In a bowl, mix Dijon mustard, honey, and tarragon. Set aside.
  • In a large oven-safe pan over medium-high heat, add a bit of oil and sear seasoned pork loin on all sides. (It will take about 4-6 minutes on all 4 sides.)
  • Brush seared pork loin with mustard sauce and cook in the oven for 35-45 minutes, until the internal temperature reaches 145°F (63°C).
  • Rest for 10-15 minutes before slicing, serving, and enjoying!
  • Yields 12 servings (~4 oz ea.) of honey Dijon pork loin roast.
