Ingredients

  • 1 cup mashed banana about 3 ripe bananas
  • 1 bag 6 oz spinach
  • ½ cup sugar/sweetener of choice
  • 1 egg
  • cup butter or coconut oil melted
  • cup oat flour
  • ½ tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder

Instructions

  • Preheat oven to 350°F (180°C).
  • Blend banana, spinach, sugar, egg, and melted butter (or coconut oil).
  • Add dry ingredients to blender.
  • Spoon into mini muffin tins
  • Bake 10-12 minutes.
  • Allow to cool completely before storing in an airtight container or zip-top bag with as much air removed as possible. Safe to store in pantry/on countertop at room temperature, or store in the fridge for maximum freshness.
  • Yields 30 mini spinach banana blander muffins.
