Anyone who knows me knows that I LOVE Mexican food. And most of all, I’m a freak for tacos! There are so many delicious ways to fill them up, and you really can never go wrong. And, it’s simple to make tacos that suit any lifestyle. Personally, tacos are one of my go-to meatless meals because I can substitute the meat with some protein-packed beans. But, after a while, I get pretty bored with black beans and more black beans… Instead, switch up your meatless Mexican routine with some vegan JACKFRUIT tacos!

Ingredients

  • 1 can jackfruit in water or brine
  • 1 small onion thinly sliced
  • taco seasoning to taste
  • avocado oil

Instructions

  • Heat oil in a pan over medium heat.
  • Add thinly sliced onion and sauté 6-8 minutes, until softened and caramelized.
  • Meanwhile, shred jackfruit. (I prefer to drain and rinse mine so it doesn’t have the brine taste!)
  • Add jackfruit to the pan with taco seasoning and stir to integrate. (Add a splash of water or vegetable broth to moisten if needed!)
  • Cook for another 6-8 minutes until the jackfruit is cooked through and beginning to crisp on the edges.
  • Serve on tacos, in a burrito bowl, or on its own and enjoy!
