Ingredients

Salmon Poke Bowl Ingredients:
cucumber & kelp noodle slaw (see below)
12 oz. sushi grade salmon, cubed (4 oz. per serving)
pineapple chunks
avocado, cubed
green onion, finely chopped
toasted garlic (see below)

Spicy Salmon Sauce:
1 Tbsp sriracha
1 Tbsp soy sauce
½ tsp rice vinegar
garlic paste, to taste
1 Tbsp red chili pepper, diced
pinch chili flakes
pinch of salt
2-3 Tbsp water

Cucumber & Kelp Noodle Slaw:
1 package kelp noodles (12 oz.)
1 carrot, peeled into ribbons
1 cucumber, peeled into ribbons
2-3 Tbsp creamy almond butter
2 tsp sesame oil
2 tsp rice vinegar
2 tsp maple syrup
1-2 Tbsp water, adjust to consistency
Yields 3 servings cucumber & kelp noodle slaw.

avocado oil
4-6 cloves garlic, chopped
