DIY coconut simple syrup with an infusion of fresh mint flavor!
Mint Simple Syrup
1 cup coconut sugar
1 cup water
1 cup fresh mint leaves, packed
- Combine coconut sugar, water and fresh mint leaves in a saucepan over medium heat. Bring to a low boil.
- Once sugar is dissolved, remove from heat. Set aside to cool for 5-10 minutes to allow the mint leaves to infuse their flavor.
- Strain the syrup through a mesh sieve to remove the mint leaves. Allow to cool completely before storing.
- Store in a jar or airtight container in the fridge for up to 6 months.
Yields 1 ½ cups simple syrup.
