Easy One Pan Dinners for Two – Almond Crusted Tilapia Filets with Garlic Snow Peas



Parmesan & Almond Crusted Tilapia

½ cup almond flour
¼ – ⅓ cup grated Parmesan cheese
1 tsp garlic powder
1 tsp onion powder
salt & pepper, to taste
2 tilapia filets (46 oz each)
12 Tbsp oil/ghee
1 lemon, zest & juice (to add after cooking)

Garlic Snow Peas

½ lb fresh snow peas
drizzle of oil
4 cloves garlic, minced
salt & pepper, to taste
1 lemon, zest & juice (to add after cooking)
12 Tbsp toasted almonds (to add after cooking)

Mango Rhubarb Salsa

1 stalk rhubarb, diced
½ cup mango, diced
½ cup cherry tomatoes, quartered
¼ cup red onion, diced
1 jalapeño, seeded & diced
2 Tbsp fresh cilantro, chopped
1 lime, juiced
salt, to taste
