Zucchini Pizza Boat

One of my favorite things to do is turn VEGGIES into PIZZA! Low carb pizza? Yes please!

Ingredients

  • 1 tsp garlic
  • grape tomatoes thinly sliced
  • 1/2 cup mozzarella
  • 1-2 Tbsp parmesan
  • 1/4 cup pasta sauce
  • 2 zucchini
  • Procedure

  • Preheat oven to 375F.
  • Slice your zucchini’s in half lengthwise, so you have 4 total boats.
  • Use a spoon to scoop out the inside of the zucchini boats (keep the boat about 1/4
  • Combine pasta sauce and garlic with the zucchini flesh.
  • Transfer zucchini mixture back into the boats, dividing mixture evenly between the four boats.
  • Sprinkle mozzarella and parmesan on top of boats.
  • Lay tomatoes on top of cheese as desired.
  • Bake for 15-20 minutes, until zucchini are tender and cheese is melted.
  • Devour!
