White chocolate and raspberries are already a winning combination. Put them into a mini muffin and it’s bite sized heaven!
1 1/2 tsp baking powder
1 tsp baking soda
3 Tbsp coconut oil
1/2 cup egg whites
1 cup greek yogurt
2 cups pastry flour whole wheat or all purpose
6 oz raspberries
1/4 tsp salt
1/4 cup stevia to taste, or sweetener of choice
1 tsp vanilla extract
1/4 cup white chocolate chips
Preheat oven to 350F.
Mix all ingredients except for raspberries and chocolate chips until well combined.
Stir in raspberries and chocolate chips.
Scoop into mini muffin tin that’s been sprayed with cooking spray. Yields about 36 mini muffs.
Bake 12-15 minutes, until a toothpick comes out clean.
Serving: 1 mini muffin
