White Chocolate Raspberry Muffins

White chocolate and raspberries are already a winning combination. Put them into a mini muffin and it’s bite sized heaven!

Ingredients

  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 3 Tbsp coconut oil
  • 1 egg
  • 1/2 cup egg whites
  • 1 cup greek yogurt
  • 2 cups pastry flour whole wheat or all purpose
  • 6 oz raspberries
  • 1/4 tsp salt
  • 1/4 cup stevia to taste, or sweetener of choice
  • 1 tsp vanilla extract
  • 1/4 cup white chocolate chips
  • Procedure

  • Preheat oven to 350F.
  • Mix all ingredients except for raspberries and chocolate chips until well combined.
  • Stir in raspberries and chocolate chips.
  • Scoop into mini muffin tin that’s been sprayed with cooking spray. Yields about 36 mini muffs.
  • Bake 12-15 minutes, until a toothpick comes out clean.
  • Devour!
