Vegetarian Lasagna Roll-Ups

Lasagna, although delicious, is pretty much a carb party. Lighten the load by enjoying a single roll-up, vegetarian style!


  • 1/4 cup black beans drained & rinsed
  • 1/3 cup cottage cheese
  • 2 tsp garlic
  • 4 lasagna noodles
  • 1 oz mozzarella cheese
  • 1/3 cup onions
  • 1 Tbsp parmesan
  • 1 cup pasta sauce
  • 1 cup spinach
  • Procedure

  • Boil lasagna noodles until tender and al dente.
  • In the meantime, sauté onions, garlic and spinach in a little cooking spray. Once cooked, mix with cottage cheese and mozzarella. Set aside.
  • Preheat oven to 425F.
  • When noodles are cool to the touch, place on a sufficient work space.
  • Spread 1 Tbsp pasta sauce, 1 Tbsp black beans, and about 1/4 of the spinach mixture on each noodle.
  • Fill the bottom of a 5×7 baking dish with about 1/2 cup pasta sauce.
  • Roll up filled noodles and place in baking dish (all 4 fit in one dish). Top with remaining 1/4 cup pasta sauce and parmesan.
  • Bake roll-ups for 20 minutes, until cheese begins to brown on top as desired.
  • Devour!
