Turmeric Snack Bites

This healthy vegan snack is sweet, chewy, and SO easy to make! Each bite is filled with nutritious, satiating fats from the cashews and coconut shreds, with a bit of maple syrup to hold them together. The turmeric adds a vibrant golden color, and a zesty kick of flavor in combination with the ginger powder. Plus, these two spices contain some of the most powerful antioxidants and anti-inflammatory substances on the planet!

Ingredients

  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1-3 tsp lemon juice
  • 1 tsp lemon zest
  • 3 Tbsp maple syrup
  • 1 cup raw cashews
  • 1/2 tsp salt
  • 1 Tbsp turmeric
  • 1.5 cups unsweetened coconut shreds
  • Procedure

  • Add coconut shreds to a food processor and blend until it gets oily.
  • Add remaining ingredients and blend until cashews are broken into a meal.
  • Press mixture into balls with hands. The dough won’t roll—it’s best to press it together. I used a 2-teaspoon cookie scoop to portion my snack bites!
  • Let set in the fridge for a few hours.
  • Yields ~30 snack bites.
