Turkey Pumpkin Meatballs

These savory pumpkin meatballs are just a little bit sweet, with a whole lot of flavor! The pumpkin makes them creamier, while the bacon brings saltiness. This recipe is loaded with veggies, high in protein, and low in fat! Best of all, one serving of this dish only costs $1 – which means this recipe will only cost you $4 total!

Ingredients

  • 2 slices Bacon chopped, or turkey bacon
  • 1/2 cup Chopped onion
  • 1 Egg
  • 1 tsp Garlic powder
  • 1/2 cup Grated carrot
  • 1 pound (LB) Lean ground turkey
  • 2 Tbsp Parsley chopped
  • 1 cup Pumpkin mashed (or sweet potato)
  • Procedure

  • Preheat oven to 400ºF (200ºC).
  • Combine all ingredients in a bowl and mix well to integrate.
  • Use a small cookie scoop to scoop out the meat mixture and use your hands to mold into a ball.
  • Transfer to a glass baking dish and bake for 18-20 minutes, flipping once.
  • Serve over rice or as you desire and enjoy!
