You know what they say about beans… They’re DELICIOUS in a fruit salad! Don’t believe me? CHECK THIS OUT!
1/3 cup avocado (cubed)
1 tsp balsamic vinegar
1/2 cup black beans
1/2 tsp honey (sub maple syrup for vegan)
1/2 tsp lime juice
1/3 cup mango (cubed)
1/4 tsp olive oil
1 Tbsp red onion (diced)
pinch of salt
1/3 cup watermelon (cubed)
Combine everything except the watermelon, mango, and avocado in a bowl.
Combine the fruit (watermelon, mango, and avocado) in a separate bowl.
Lay the bean mixture out flat onto a plate or into a bowl.
Pour your fruit on top, garnish with a little basil (optional) and enjoy!
