Tooty-Fruity Salad

You know what they say about beans… They’re DELICIOUS in a fruit salad! Don’t believe me? CHECK THIS OUT!

Ingredients

  • 1/3 cup avocado (cubed)
  • 1 tsp balsamic vinegar
  • 1/2 cup black beans
  • 1/2 tsp honey (sub maple syrup for vegan)
  • 1/2 tsp lime juice
  • 1/3 cup mango (cubed)
  • 1/4 tsp olive oil
  • 1 Tbsp red onion (diced)
  • pinch of salt
  • 1/3 cup watermelon (cubed)
  • Procedure

  • Combine everything except the watermelon, mango, and avocado in a bowl.
  • Combine the fruit (watermelon, mango, and avocado) in a separate bowl.
  • Lay the bean mixture out flat onto a plate or into a bowl.
  • Pour your fruit on top, garnish with a little basil (optional) and enjoy!
