Sweet Potato Truffles

These truffles are sweet and delicious, using a vegetable as the base!!


  • 4 Tbsp chocolate chips dark, dairy free/vegan if preferred
  • 2 Tbsp coconut flour
  • 1 Tbsp maple syrup
  • 1 Tbsp orange juice
  • 1 tsp orange zest
  • 1 Tbsp pb2 (powdered peanut butter or peanut flour)
  • 1 cup sweet potatoes mashed
  • Procedure

  • Mix all ingredients except for chocolate chips until well combined. You should find a consistency that is firm enough to roll into a ball.
  • Use tablespoons of the ‘dough’ to create your truffle balls. Transfer to freezer for 10-15 minutes to firm up.
  • Melt your chocolate in the microwave (30 seconds at a time) or using a double boiler method.
  • Use two forks or utensils of your choice to completely cover the truffles in chocolate, draining off the excess.
  • Transfer to parchment while you complete the rest. Transfer the entire batch into the fridge to chill and allow the coating to harden before devouring. Store in the fridge.
