Sweet Potato Quinoa Salad

This quinoa salad is both savory and sweet! A light and wholesome addition to any lunch! Healthy and totally vegan!

Ingredients

  • 2 Tbsp Balsamic
  • 1/3 cup Dried cranberries
  • 1 tsp Garlic minced
  • Lemon juice
  • 1 tsp Maple syrup
  • 1 Tbsp Olive oil
  • 1/4 cup Parsley chopped
  • Pepper
  • 1 cup Quinoa cooked
  • 1/4 cup Red onion chopped
  • Salt
  • 3 Tbsp Sunflower seeds
  • 2 cups Sweet potato cubed
  • Procedure

  • Whisk together dressing (olive oil, balsamic, lemon juice, maple syrup, minced garlic).
  • Combine all ingredients, toss by hand.
  • Devour or chill! Lasts 4-5 days in the fridge
