This curry is so simple, and it’s still packed with flavor! This meal is budget-friendly AND vegan!
1 can of Coconut milk 14 oz
1 Tbsp Curry
1 Onion large
1 Potatoes large
1 Sweet potato large
1 cup Water
Saute onions in a little cooking spray in a large pot over high heat. Add a pinch of salt.
Once onions are translucent, add remaining ingredients.
Bring mixture to a boil, turn down heat to low, and simmer for about 20 minutes, until potatoes are tender.
Blend mixture to desired consistency and enjoy!
