Sweet Potato & Bacon Baked Hush Puppies

Sweet Potato & Bacon Baked Hush Puppies

Bring some bite-sized comfort to Thanksgiving with these scrumptious BAKED hush puppies! No deep fryer needed—but they’re still filled with the nostalgic homestyle flavor and mouthfeel that I crave. Buttery yet light, ultra-savory, and with just enough natural sweetness! For the base of this batter, I used classic cornmeal along with some oat flour to keep these puppies cleaner and gluten free. And, feel free to add a bit of cayenne to your batter if you’d like a fun kick of heat!

Best of all, the hint of sweetness in these baked hush puppies is actually coming from a sneaky VEGETABLE: sweet potato! Paired with savory bacon, that salty-sweet combo makes this fun Thanksgiving side dish simply irresistible. Bake them up until they’re firm and beautifully golden brown. For maximum deliciousness, sprinkle with powdered sugar and serve with maple Dijon dip!
