Swedish Meatballs (Ikea inspired)

Swedish Meatballs (Ikea inspired)

When you want Ikea meatballs and you can’t have them, just make your own! I added mushrooms to the gravy (why not?) but they’re of course optional!

Ingredients

  • 8 baby bella mushrooms sliced
  • 1/4 tsp black pepper
  • 3 Tbsp bread crumbs
  • 1 cup broth chicken/vegetable
  • 1/8 tsp cardamom
  • 1/3 cup greek yogurt
  • 12 oz ground turkey breast lean– I prefer lean 93/7 to extra lean for this recipe– the extra fat really adds to the flavor
  • 1/8 tsp nutmeg
  • 1 tsp olive oil
  • 1/2 cup onions chopped
  • 1/2 tsp parsley
  • 1/2 tsp salt
  • 2 1/2 Tbsp whole wheat flour
  • Procedure

  • Mix the onion, bread crumbs, salt & pep, nutmeg and cardamom with your ground turkey meat. Roll into balls small meatballs, about the size of a normal Ikea meatball (smaller than golf ball, around 1/3oz). Yields about 36 balls.
  • Heat oil over medium heat. Cook meatballs until cooked through, no pink inside– about 8–10 minutes. Set aside.
  • Add mushrooms to the same pan and allow to reduce in size, about 5–8 minutes.
  • Add broth and allow to come to a light boil. Add flour and whisk to combine. Continue to heat and whisk until the sauce thickens. Once thick as desired, remove from heat and add yogurt and parsley. Season with salt & pep if needed. Stir your meatballs into sauce, coating thoroughly. Serve with optional lingonberry jam!
