When healthy food is fun, we’re more likely to eat it—especially when it comes to kids. Keep healthy school lunches interesting, less messy, and crust-less with this easy DIY Uncrustable sandwich! I’ve switched up the standard recipe by using 100% whole wheat bread, mashed banana, and sunflower seed butter for a totally nut-free sandwich recipe. Then, with just a biscuit/cookie cutter and a fork, you can create the classic Uncrustable shape and pleated edges!
1 banana mashed
4 slices bread of choice
2 Tbsp sunflower seed butter
Roll bread out to flatten and widen slices. Cut out circle shapes with 3-inch cookie cutter for Uncrustable sandwich.
Spread sunflower seed butter onto each cut-out bread circle—a thick layer on one slice, and a thinner layer on the other slice.
Mash banana and dollop onto bread slice with thick layer of sunflower seed butter.
Top with other slice and crimp edges together with a fork to seal.
Yields 2 DIY Uncrustable sandwiches.
