Strawberry Cheesecake Cups

Strawberry cheesecake in a jar– portion controlled cuties that are absolutely delicious and perfect for a cool summer treat! The texture is between that of cheesecake and a thick pudding, which is why it’s perfect for a jar! At under 150 cals a pop, you can enjoy these as a treat, or even a snack!


  • 1/2 cup almonds
  • 2 Tbsp coconut flour
  • 1 cup cottage cheese low fat
  • 1/2 cup cream cheese low fat or Neufchatel cheese
  • 1/2 cup dates
  • 1/2 cup greek yogurt
  • pinch of salt
  • 1 cup strawberries
  • 1/4 cup sweetener
  • 1/2 Teaspoon vanilla extract
  • whipped cream optional or coconut whipped cream
  • Procedure

  • Combine the dates, almonds, and a pinch of salt in a food processor until a sticky gritty mixture forms. Press into the bottoms of your 4oz mason jars, dividing evenly into 8 jars.
  • Combine the remaining ingredients (except whipped cream) in the food processor, blending until smooth and creamy.
  • Spoon into jars on top of the crust layer.
  • Refrigerate for 4 hours before topping with whipped cream and devouring.
