Strawberry cheesecake in a jar– portion controlled cuties that are absolutely delicious and perfect for a cool summer treat! The texture is between that of cheesecake and a thick pudding, which is why it’s perfect for a jar! At under 150 cals a pop, you can enjoy these as a treat, or even a snack!
1/2 cup almonds
2 Tbsp coconut flour
1 cup cottage cheese low fat
1/2 cup cream cheese low fat or Neufchatel cheese
1/2 cup dates
1/2 cup greek yogurt
pinch of salt
1 cup strawberries
1/4 cup sweetener
1/2 Teaspoon vanilla extract
whipped cream optional or coconut whipped cream
Combine the dates, almonds, and a pinch of salt in a food processor until a sticky gritty mixture forms. Press into the bottoms of your 4oz mason jars, dividing evenly into 8 jars.
Combine the remaining ingredients (except whipped cream) in the food processor, blending until smooth and creamy.
Spoon into jars on top of the crust layer.
Refrigerate for 4 hours before topping with whipped cream and devouring.
Serving: 1 dessert jar
