Spinach and Artichoke One-Pot Pasta

Make dinnertime easier! This spinach artichoke pasta is delicious, nutritious, and SO convenient – just one pot gets the job done! You can make this recipe vegan by omitting the parmesan cheese, or make it gluten-free by using gluten-free pasta!

Ingredients

  • 14 oz. can artichoke hearts
  • 1/2 cup almond milk
  • 1/2 cup chopped onion
  • 1/4 tsp dried thyme
  • 3 Tablespoons fresh parsley
  • 3 garlic cloves minced
  • 2 tsp olive oil
  • 1/3 cup parmesan cheese
  • 1/8 tsp pepper
  • 1 pound (LB) rotini pasta (or other pasta of choice)
  • 3/4 tsp salt
  • 2 cups spinach
  • 4.5 cups water
  • Procedure

  • In a pot over medium heat, sauté onions and garlic in a bit of olive oil.
  • Add artichoke hearts, salt & pep, pasta, thyme, parsley and water.
  • Bring to a boil.
  • Turn down to a simmer and sit uncovered until the pasta is cooked through and liquid has reduced (10-12 minutes).
  • Stir in the spinach, parmesan and almond milk, until spinach has wilted (2-3 minutes).
  • Serve!
