Spaghetti Pie

A creative twist on spaghetti, baked into a tasty pie! Super cheesy, vegetarian, but still packed with protein. Best of all, you can make this tasty, healthy option for less than $1 per serving!

Ingredients

  • 15 oz Black beans drained, rinsed
  • 1 cup Cottage cheese low-fat, or ricotta
  • 1 can of Diced tomatoes 14 oz
  • 3 Eggs
  • 2 Garlic cloves
  • 1/2 cup Mozzarella
  • 1/2 cup Onion chopped
  • 3 Tbsp Parmesan
  • 2 Tbsp Parsley fresh
  • 3/4 tsp Pepper
  • 3/4 tsp Salt
  • 1 bag of Spaghetti 16 oz
  • 1 cup Tomato sauce
  • Procedure

  • Cook spaghetti al dente, about 3-4 minutes less than package recommends.
  • Preheat oven to 350°F (175°C).
  • Saute onions in cooking spray. Add in garlic and beans once translucent.
  • Whisk together pasta tomato sauce, cottage cheese, parsley, eggs, parmesan, and salt & pep. Add cooked onion mixture.
  • Transfer to sprayed spring form pan.
  • Top with mozzarella cheese.
  • Bake 40-45 minutes, until cheese is bubbly.
  • Rest 30 minutes before serving.
