A creative twist on spaghetti, baked into a tasty pie! Super cheesy, vegetarian, but still packed with protein. Best of all, you can make this tasty, healthy option for less than $1 per serving!
15 oz Black beans drained, rinsed
1 cup Cottage cheese low-fat, or ricotta
1 can of Diced tomatoes 14 oz
2 Garlic cloves
1/2 cup Mozzarella
1/2 cup Onion chopped
3 Tbsp Parmesan
2 Tbsp Parsley fresh
3/4 tsp Pepper
3/4 tsp Salt
1 bag of Spaghetti 16 oz
1 cup Tomato sauce
Cook spaghetti al dente, about 3-4 minutes less than package recommends.
Preheat oven to 350°F (175°C).
Saute onions in cooking spray. Add in garlic and beans once translucent.
Whisk together pasta tomato sauce, cottage cheese, parsley, eggs, parmesan, and salt & pep. Add cooked onion mixture.
Transfer to sprayed spring form pan.
Top with mozzarella cheese.
Bake 40-45 minutes, until cheese is bubbly.
Rest 30 minutes before serving.
