Southwest Bean Salad

A zesty salad, made entirely from light and fresh ingredients! Enjoy this salad on its own, use it as a taco filling, or dip some chips into it like a chinky salsa! This recipe is easy, vegan, and under $0.65 per serving!

Ingredients

  • 15 oz Black beans
  • 1 tsp Chili powder
  • 2 Tbsp Cilantro optional
  • 15 oz Corn
  • 1 Green bell pepper
  • Lime juice
  • 15 oz Pinto beans
  • 1 Red bell pepper
  • 1/4 tsp Salt
  • 1/2 cup Tomato diced
  • Procedure

  • Add all your ingredients into a mixing bowl and mix well to combine.
  • Serve on lettuce wraps, tacos, plain as a salad, or on greens! Delicious garnished with avocado!
