Slow-Cooker Jackfruit Curry

Slow cooker recipes make life SO easy. This vegan curry recipe uses jackfruit, and it becomes unbelievably tender and flavorful in the slow cooker—it falls apart like cooked meat! You could use this recipe with any protein, but it’s pretty amazing that a FRUIT can turn out just as delicious in a curry!

Ingredients

  • 1 can of coconut milk
  • 2 cans of jackfruit (in brine or water, not syrup)
  • 1 Tbsp coconut oil (or grass-fed butter if desired)
  • 1 tsp cumin
  • 1 Tbsp curry powder
  • 3 Tbsp garam masala
  • 5 garlic cloves minced
  • 1 Tbsp ginger paste
  • 1 cup onion sliced
  • pepper, to taste
  • 1 red bell pepper diced
  • salt, to taste
  • 2 Tbsp tomato paste
  • Procedure

  • Add everything to the crockpot and mix together.
  • Put on the lid and cook low and slow for 4 to 6 hours.
  • Yields ~5 cups.
