Slow cooker meals are SO convenient, and you only need 3 ingredients to make this easy recipe! The barbecue sauce and the pineapple chunks give this both sweet and tangy flavors, that infuse deep into meat during the slow cooking process. And, the chicken turns out so moist and delicious!
2 pounds (lbs) boneless skinless chicken breast cut into larger pieces to be shredded later
20 oz canned pineapple chunks
18 oz low-sugar barbecue sauce
Add all ingredients to slow cooker.
Cover with lid and cook on low for 6-8 hours. (Can also cook for 3 hours on high, but low and slow cooking results in much more tender chicken!)
Remove chicken pieces from slow cooker and shred, using two forks. Return chicken shreds to sauce to soak up flavors.
Serve over rice, on a sandwich bun, or as is!
Yields ~42 ounces Hawaiian BBQ Chicken.
NOTE: If you don’t have a slow cooker, you can also cook this recipe in a pot over the stove. Just add your ingredients and cook over low for the same amount of time—but, I do NOT recommend leaving the house if you choose to use this method! Be sure to monitor the pot while it cooks!
