Slow Cooker Fajitas

These tasty fajitas require NO skillet and are SO EASY to make! A great vegan freezer meal to use in your meal prep. Simply add all of your ingredients into a freezer bag to freeze, thaw out in the fridge overnight, then pop it into your slow cooker! You could also add chicken or beef to this recipe, if desired.

Ingredients

  • 6 bell peppers sliced into strips
  • 30 oz canned black beans (drained & rinsed)
  • 14.5 oz canned diced tomatoes
  • 2 Tbsp chili powder
  • 1 Tbsp cumin
  • 2 tsp paprika
  • 1/8 tsp pepper
  • 1/4 tsp red pepper flakes
  • 1/4 tsp salt
  • 2 cups white onion thinly sliced
  • Procedure

  • Combine all ingredients into a large freezer bag. Remove any air from the bag, seal, and freeze.
  • The night before cooking, transfer bag to refrigerator to thaw.
  • After thawing, pour bag into slow cooker. Cook on low for 6 to 8 hours, or on high for 2 to 3 hours.
  • Serve in tortillas, with lettuce, shredded cheese, or your favorite toppings! You could also serve this over rice as a burrito bowl, or as a salad over greens!
