These tasty fajitas require NO skillet and are SO EASY to make! A great vegan freezer meal to use in your meal prep. Simply add all of your ingredients into a freezer bag to freeze, thaw out in the fridge overnight, then pop it into your slow cooker! You could also add chicken or beef to this recipe, if desired.
6 bell peppers sliced into strips
30 oz canned black beans (drained & rinsed)
14.5 oz canned diced tomatoes
2 Tbsp chili powder
1 Tbsp cumin
2 tsp paprika
1/8 tsp pepper
1/4 tsp red pepper flakes
1/4 tsp salt
2 cups white onion thinly sliced
Combine all ingredients into a large freezer bag. Remove any air from the bag, seal, and freeze.
The night before cooking, transfer bag to refrigerator to thaw.
After thawing, pour bag into slow cooker. Cook on low for 6 to 8 hours, or on high for 2 to 3 hours.
Serve in tortillas, with lettuce, shredded cheese, or your favorite toppings! You could also serve this over rice as a burrito bowl, or as a salad over greens!
