These Red Velvet Whoopie Pies are perfect for Valentines Day for a loved one, or for yourself anytime of year– they are VEGAN and healthy! Such a fun recipe! These are chocolate flavored, but red thanks to the beets! Add a drop of food coloring or use a regular egg and less cocoa powder to keep the batter lighter in color and more red.
1/3 cup Almond milk
3/4 tsp Baking powder
3/4 tsp Baking soda
1-3 Tbsp Cocoa powder
3 Tbsp Coconut oil
1/4 cup Coconut sugar
Coconut whipped cream
1 Flax egg – 1 tbsp ground flax + 3 tbsp water
1 1/2 cups Oat flour
1/3 cup Pureed beets
1/4 tsp Salt
1/4 cup Sweetener
1 tsp Vanilla
Preheat oven to 350°F.
Whisk together dry ingredients and set aside.
Beat oil, sugar, flax egg, beets and vanilla in another large bowl.
Add ½ dry mixture to wet, alternating with ½ of the milk, until everything is combined. Beat until smooth.
Drop batter by the tablespoon onto a baking sheet. Flatten out with the back of the spoon if you’d like them to be flatter whoopie pies.
Bake until firm to the touch, about 8 minutes.
Cool on the pan until cool to the touch.
Fill with your coconut whipped cream filling (add extra powdered sugar to make it more firm).
Chill for about 30 minutes before devouring.
