Red Velvet Whoopie Pies

These Red Velvet Whoopie Pies are perfect for Valentines Day for a loved one, or for yourself anytime of year– they are VEGAN and healthy! Such a fun recipe! These are chocolate flavored, but red thanks to the beets! Add a drop of food coloring or use a regular egg and less cocoa powder to keep the batter lighter in color and more red.


  • 1/3 cup Almond milk
  • 3/4 tsp Baking powder
  • 3/4 tsp Baking soda
  • 1-3 Tbsp Cocoa powder
  • 3 Tbsp Coconut oil
  • 1/4 cup Coconut sugar
  • Coconut whipped cream
  • 1 Flax egg – 1 tbsp ground flax + 3 tbsp water
  • 1 1/2 cups Oat flour
  • 1/3 cup Pureed beets
  • 1/4 tsp Salt
  • 1/4 cup Sweetener
  • 1 tsp Vanilla
  • Procedure

  • Preheat oven to 350°F.
  • Whisk together dry ingredients and set aside.
  • Beat oil, sugar, flax egg, beets and vanilla in another large bowl.
  • Add ½ dry mixture to wet, alternating with ½ of the milk, until everything is combined. Beat until smooth.
  • Drop batter by the tablespoon onto a baking sheet. Flatten out with the back of the spoon if you’d like them to be flatter whoopie pies.
  • Bake until firm to the touch, about 8 minutes.
  • Cool on the pan until cool to the touch.
  • Fill with your coconut whipped cream filling (add extra powdered sugar to make it more firm).
  • Chill for about 30 minutes before devouring.
