A warm stew is the perfect, hearty dinner! This recipe is so simple, totally vegan, and packed with plant-based protein!
28 oz can of crushed tomatoes
3/4 – 1 cup chopped onion
2 garlic cloves minced
1 pound (LB) lentils uncooked
1 Tbsp olive oil
pepper (to taste)
salt (to taste)
4 cups water
Sauté onions and garlic in olive oil.
Add lentils, tomatoes, and water. Bring to a boil, lower heat, cover, and simmer for around 30 minutes, until all the liquid is absorbed. Stir occasionally to make sure they aren’t dry.
Season to taste with salt and pepper.
Store in an air-tight container. Lasts 4-5 days.
