Red Lentil Stew

A warm stew is the perfect, hearty dinner! This recipe is so simple, totally vegan, and packed with plant-based protein!


  • 28 oz can of crushed tomatoes
  • 3/4 – 1 cup chopped onion
  • 2 garlic cloves minced
  • 1 pound (LB) lentils uncooked
  • 1 Tbsp olive oil
  • pepper (to taste)
  • salt (to taste)
  • 4 cups water
  • Procedure

  • Sauté onions and garlic in olive oil.
  • Add lentils, tomatoes, and water. Bring to a boil, lower heat, cover, and simmer for around 30 minutes, until all the liquid is absorbed. Stir occasionally to make sure they aren’t dry.
  • Season to taste with salt and pepper.
  • Store in an air-tight container. Lasts 4-5 days.
