Rainbow Macaroni Salad

This easy pasta salad is made healthier with yogurt instead of mayo and “volumized” with tons of veggies! Perfect for taking on-the-go! It can be eaten room temperature or cold so it doesn’t need to be heated up. Great for summer picnics, potlucks or healthy lunches!


  • 1 cup Corn
  • 4 cups Elbow macaroni noodles cooked
  • 2 stalks Green onion chopped
  • 1 Jalapeño seeded if desired
  • 2 Tbsp Lemon juice
  • 2 Mini cucumber chopped
  • 1 Tbsp Mustard
  • 1/4 cup Parsley
  • 1/2 tsp Pepper
  • 1/2 tsp Salt
  • 1/2 cup Yogurt plain-flavored, Greek or dairy-free
  • Procedure

  • Add yogurt, mustard, lemon juice, salt & pepper into a large bowl and whisk well to combine.
  • Toss all remaining items into the bowl and coat well in the dressing.
  • Adjust seasonings to taste.
  • Store for later use.
